Best-Ever Meat Loaf

4 slices whole wheat bread
3/4 c. cold water
1 lb. lean ground beef
1 small onion, chopped
1 tsp. salt
dash of pepper
1 egg, slightly beaten
3 Tbsp. parmesan cheese
1/2 c. barbecue sauce

Break up bread and soak in cold water. Combine with meat and blend thoroughly; then add onion, s & p, egg, and cheese. Shape into loaf on a greased baking pan. Bake 375 for 1/2 hour. Pour on barbecue sauce and bake another 20 minutes. This meatloaf holds together and stays moist. It makes delicious cold sandwiches.

Navajo Tacos

12 Rhodes Texas rolls, thawed and risen
vegetable oil for frying
1 lb ground beef
1 (15 oz) can pinto beans
1 envelope taco seasoning
2 cups shredded cheddar cheese
2 cups shredded lettuce
2 medium tomatoes, diced
1 medium onion, chopped
1 cup sour cream
1 cup salsa

Flatten each roll to a 6-inch circle. Fry each side in vegetable oil at 375 degrees until golden brown. Follow directions on taco seasoning package to prepare ground beef. Add pinto beans and heat through. Place desired amount of ground beef mixture on warm fry bread. Top with desired toppings.

The Best Meatballs

2 lb. ground beef

1 pkg. Stuffing Mix for Chicken

1-1/4 cups water

2 eggs

12 oz grape jelly

16 oz barbecue sauce

Mix ingredients until blended; shape into 32 (1-1/2-inch) balls. Line 2 cookie sheets with foil; spray with cooking spray. Place 16 meatballs in each prepared pan. Bake at 400 degrees for 16 to 18 min. or until done (160ºF). Bring grape jelly and barbecue sauce to a boil over medium heat, stirring occasionally. Combine half the meatballs with sauce. Freeze remaining meatballs when cool. Makes two 4 serving meals. This recipe makes enough sauce that half of the sauce can be frozen also.

Thaw meatballs. Add frozen sauce and thawed meatballs to skillet. Heat until both are hot. Serve with rice, noodles, or potatoes.

Baked Ziti

This will make 2 9x9 pans

1 pkg pasta ( I used Rigatoni)

1 lb hamburger

1 Jar Spaghetti Sauce

1 Onion Chopped

1 clove garlic

1 Cup Mozzarella cheese

1 Cup low fat sour cream


Brown hamburger with onion, garlic and salt and pepper.  Cook noodles according to package directions.  Mix cheese and sour cream together.  Add sauce to cooked hamburger.  In a 9x9 pan layer noodles, sauce/hamburger mixture, and a layer of cheese/sour cream mixture.  Repeat noodles, sauce/hamburger and top with a little bit more cheese.  REMEMBER THIS MAKES 2 PANS.
Cook at 350 and cook for 30 min.
If frozen, thaw completely before cooking.
